Questions about hair straighteners?

Ok so I'm looking for a new hair straightener because the one I have is TERRIBLE. It doesn't even stay hot enough to do half my head and take sooo long to heat up... Sooo, I know Chi is probably the best, but what would be the NEXT best?

So far I've considered:

- Remington Wet 2 Straight

- Bed Head Tourmaline Nano-Ceramic Hair Straightener

- Lots by Conair

Also, on a side note, how do you know how hot to make it?
